Meatloaf with Cauli-Tater Crust

This is a real good dish for those people who are real big meat 'n potatoes lovers but want something without the tons of starchy carbs.




 Ingredients you'll need are:
For the meat:
- 1-2 lbs Ground Beef
- 2-4 Tbsp Onion Powder
- 1-2 Tbsp Garlic
- Crushed Chilies to taste
- Few shakes of salt and pepper
- 2 or 3 eggs

For the tomato paste:
- 1 can of tomatoes
- 2 Tbsp Onion Powder
- 1 Tbsp Garlic
- Couple teaspoons of sweetener

For the Cauli-tater topping
- Large head of cooked cauliflower
- 2 Tbsp Cream
- 2 Tbsp Butter
- Several shakes of salt and pepper
- 2 Tbsp Onion Powder
- 1 Tbsp Garlic 
- 1/2 Tsp Xanthan Gum





You'll need these for the tomato paste and beef


Here's what you'll need for the crust


Throw the ground beef in a pan to fry


Add the spices and continue to brown
Mix the tomatoes, spices, and
sweetener in a pot on high



Let it boil away while you occasionally stirring


When the beef is done cooking...


Pull out a casserole dish


Add and mix in the eggs


Throw in the tomato paste


Mix it up real good and
flatten it out a bit on top


Throw it in the oven
for 15-20 minutes
Make sure you have your cauliflower cooked by this point and set the oven to preheat to 400 F.


Throw your cauliflower in a
blender or food processor


Add the other ingredients and blend until smooth


Put the cauliflower topping on top of the meatloaf
I also put some Parmesan cheese on too


Put it back into the oven until
the crust is sufficiently browned



Pull that meatloaf out


And enjoy!

Low Carb Turkey Dinner

There are certain times of the year that most people find it very hard to stay away from the starchy high carb goodies that are traditional to serve. You know what I'm talking about, a nice turkey dinner on Thanksgiving, Christmas, or just whenever turkeys go on sale at the grocery store. Stuffing and potatoes are usually what throw off the low carbers but finding better alternatives is not impossible. In this post I will go over alternatives for mashed potatoes and stuffing, the highest carb parts of most turkey dinners. This should be cooked along with a big turkey and of course some gravy.

For the mashed cauli-taters you'll need:
- Head of cauliflower
- 2 Tbsp Cream
- 1 Tbsp onion powder\
- 1/2 Tbsp Garlic 
- 1/2 Tsp Xanthan Gum (improves texture)
- Couple large dollops of butter
- Salt & Pepper



Throw the cauliflower into a blender or food
processor


Add the cream and
blend until smooth
Throw butter in a pan and melt on medium
Add the blended cauliflower, onion powder,
garlic, and xanthan gum along with a few
dashes of salt & pepper
Mix well over a medium heat for a few minutes and serve


Here's the stuffing which should either be eaten or covered and refrigerated right away otherwise it can dry out, although that can be fixed with some gravy.
You will need:
- 2/3 Cup Unflavoured Protein Powder
- 4 Tbsp Almond Flour
- 1/2 Tbsp Psyllium Husks
- 1 Tbsp Parsley
- 1/2 Tsp Baking Soda
- 1 Tbsp Baking Powder
- 1 Tsp Poultry Seasoning
- 1 Tbsp Onion Powder
- Chopped Celery & Onion

- 1/3 Cup turkey drippings or chicken boullion and oil
- 2 Tbsp Cream
- 1 Egg




Throw all the dry ingredients into a bowl


Chop up the onion and celery


Throw the onion and celery into an oiled pan on a high heat


These are the liquids you will need


Add the liquids to the dry ingredients and mix well


Add the mix to the pan and turn heat down a bit


Cook like you are making scrambled eggs and it will form into clumps

 
Cook until it reaches a bready, stuffing-like
texture and serve

    Throw your newly made stuffing & cauli-taters
    on a plate with some turkey, gravy, and maybe
    some other low carb veggies and most
    importantly, enjoy!

    Guilt Free Protein Pancakes

    Here's a super easy recipe for pancakes that I came up with that is very low carb and makes some tasty pancakes.



    - 1/4 Cup + 1 Tbsp Unflavoured Protein Powder
    - 1/4 Cup Almond Flour
    - 1/4 Cup Sweetener (Splenda, Xylitol, etc)
    - 1 Tbsp Baking Powder
    - 1 Tbsp Psyllium Husk (not required)
    - 1 Tsp Baking Soda
    - Dash of Cinnamon (optional)
    - 2 Tbsp Cream
    - 2 Tbsp Oil
    - 2 Tbsp Water
    - Splash of Vanilla
    - 1 Egg


    Dry ingredients here

    Mix the dry ingredients in a bowl

    Here's the liquids

    Get that pan oiled and on medium heat

    Add the rest of the ingredients and mix well

    Pour spoonfuls of the batter into the pan

    Flip when bubbles start to appear and
    remove pancakes when both sides are browned

    Serve with your choice of toppings
    I used from top going clockwise:
    whipped cream and strawberries,
    butter and sugarfree syrup, and
    butter with xylitol and cinnamon

    If you have any leftovers, cover them or
    put them in a bag and put them in the
    microwave for later

    Ginger Pork and Green Onion Cakes

    Here's a sweet and spicy recipe for an Asian ginger pork with a side of green onion cakes. The best part of all, they don't have many carbs at all. The green onion cakes have hardly any at all.

    For the Sauce
    - 1/4 Cup of sweetener(I used a mix of xylitol, splenda, and powdered stevia)
    - 2 Tbsp garlic
    - 1 Tbsp onion powder
    - 2 Tsp ginger
    - 1 Tsp crushed chilis
    - 1/4 Tsp xanthan gum(this thickener can be left out)
    - 3 Tbsp Soy Sauce
    - 2 Tbsp Rice Vinegar
    - 2 Tbsp Sesame Oil
    - 1/2 Cup Water


    For the rest
    - 1 to 2 Carrots peeled and sliced up
    - 1 to 2 Peppers (Sweet, Anaheim, etc) sliced up
    - 5 or so green onions
    - Spicy Peppers (if you like that extra burn)\
    - Pound or so of pork (or beef) shredded





    Start off by prepping the veggies
    Shred the meat
    Get the ingredients for the sauce ready

    Put all the dry ingredients for the sauce together

    Grab the liquids
    Add the liquids and mix

    Get the pot/pan oiled and on high heat

    Throw in the green onions or scallions

    Add the pork and cook with 1/2 of the sauce

    Add the rest of the veggies

    Cook with the rest of the sauce until veggies are tender




    For the green onion cakes you'll need:


    - 5 or more green onions
    - 3 Tbsp Margarine
    - 3 Tbsp Almond flour
    - 1/4 Cup Unflavoured whey protein
    - 1/4 Tsp baking powder
    - Dash or two of salt
    - 1 Egg




    Grab these dry ingredients

    Grab some green onions and cut them up really small


    Put the margarine in a bowl

    Add the dry ingredients

    Mix thoroughly

    Add the egg and mix well

    Mix in shredded green onions

    Oil and heat a pan on medium and add some dough

    Brown cakes on both sides

    Serve and enjoy!
